Piri-Piri Marinade

Introduction

Piri-piri chicken is such a great marinade to use on most meats, however Chicken is my favourite! The following list of ingredients makes enough marinade to use on a kilo of chicken, (I almost always use chicken thighs), a whole chicken you also work well! This recipe is well worth trying! The ingredients don't cost the earth, the marinade takes a few minutes to make and the taste of the chicken after marinating for 24 hours is phenomenal! You will look the BBQ king when you pull this out of the fridge!

4 – 5 Fresh hot chilli peppers.
Juice of 2 lemons (a lime could be used too).
4 tablespoons of oil (vegetable or olive oil is fine).
1 tablespoon of cayenne pepper.
3 cloves of fresh garlic.
1 tablespoon of paprika.
1 teaspoon of salt.
1 teaspoon of oregano.

Method

Chuck everything into a blender and blitz, if you want some whole chilli rings in the mix just chop some up before blending and keep them aside. If the mixture doesn’t look like it’s made enough just chuck in some more oil to top it up.

How to use

Transfer the marinade into a glass bowl and add the chicken, mix the chicken in thoroughly and even better still use a knife to carefully pierce the skin and meat and push the marinade into all the nooks and crannies!

Seal the bowl air tight with cellophane and refrigerate for 24 hours, the time spent in the fridge can be less but I try and aim for a day.

How to cook

The absolute best way to cook this kind of chicken is on a charcoal BBQ! But if the weathers bad or don't have the energy just stick it in the grill (George forman grills are a great alternative too). The most important thing when cooking chicken is to make sure it’s fully cooked at the thickest parts.
